How’s the hangover this morning? Are we still having chocolate for breakfast?
Christmas is a magical time isn’t it; family, friends and staying in our pyjamas all day long. It’s always the time when a meat that usually languishes on the supermarket shelves becomes the star of the Christmas feast. I am of course talking about the turkey.
But today, on Boxing Day, there are surely some more exciting things we can do with our turkey leftovers than sandwiches? Take a look at some of the ideas below to see how you can thriftily transform your leftover turkey over the next few days.
Turkey and leek pie
Super easy and a great way to use up all of those leftover vegetables too! Fry over some bacon, chopped leeks and onions on a low heat for 20 minutes until soft. Add some chopped up turkey (around 800g) torn into big chunks. If you have any leftover stuffing, add that too! Stir for three minutes then add about 2 pints of stock, again using your leftovers! Bring up to the boil then simmer for 10 mins.
Spoon into a dish of your choosing (deep please) then use your leftover potato mash on the top. Even sprinkle some cheese on the top if you’d like. Bang it in the oven for around 20 minutes and you’re done.
Asian influenced turkey salad
If you’d like something a little lighter, fry over around 2 handfuls of brown turkey meat in a pan with a handful of dried cranberries, handful of cashew nuts and 2 teaspoons of all spice on a medium heat. Let it simmer away whilst you make the dressing.
To make the sauce use the juice of half a lime, juice of half a clementine, 1/2 a red onion grated, 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, extra virgin olive oil and one thumb of grated ginger. Mix and taste. If it’s too salty add more lime juice. Mix together the salad leaves with some chopped mint and corinader, adding your turkey mix and the dressing. Ensure all the leaves are covered and, for extra yumminess, scatter with some pomegranate pips.
Following my recipe for making your own pizza add your Christmas leftovers as the topping…though maybe leave off the sprouts? Add some mozzarella with sage leaves and you’re winning!
